Christmas Treats Recipe Challenge Blog Hop -Chocolate Peppermint Cookies w. Yellow Cake Mix

Last month I followed a recipe for Apple Cider Donut  Cake that included using yellow box cake mix. Since I am always trying to use less premade store bought items, I decided to whip up a few mason jars of yellow cake mix for the holiday season. I looked around Pinterest and found a bunch of recipes for cakes and cookies using this simple yellow cake mix. Now, I have half my homemade recipe ready to go by grabbing one of my pretty mason jars. I went on to make a Rose Cake that would wow anyone. 
Today, I will be giving you a recipes for two types of cookies and the recipe to make your own yellow cake mix to store .



#1 Chocolate Chip Coconut Cookies


#2 Peppermint Chocolate Chocolate Chip Cookies




Yellow Cake Mix Recipe
2 1/4 Cups All Purpose Flour 
1 1/4 cups Sugar 
3 1/2 Baking Powder
1/2 Tsp Salt 
Mix and store in mason jars.

Chocolate Chip Coconut Cookies Recipe Using Yellow Cake Mix
Ingredients 
1 Yellow Cake Mix (recipe above)
1/4 cup Unsweetened Shredded Coconut
1 cup Chocolate Chips
1 tsp Vanilla
3 Eggs 
2 tbl water 
1/2 cup of melted Virgin Coconut Oil
Bake- 350° 15 minutes


In a big mixing bowl pour in 1 batch of premade yellow cake mix and whisk. Add the eggs, vanilla, water, oil, and chocolate chips. Mix using a wooden spoon. drop teaspoons on an ungreased cookie sheet and bake for 15 minutes or until slightly golden around the edges.


Peppermint Chocolate Chocolate Chip Cookies
1 Yellow Cake Mix (recipe above)
1 cup Chocolate Chips
1 tsp Vanilla
3 drops of Peppermint Essential Oil
3 Eggs 
2 tbl water 
1/2 cup of melted Virgin Coconut Oil
Crushed Candy Canes for Topping
Melted Chocolate Chips for Drizzle 

In a big mixing bowl pour in 1 batch of premade yellow cake mix and whisk. Add the eggs, vanilla, peppermint essential oil, oil, and chocolate chips. Mix using a wooden spoon. drop teaspoons on an ungreased cookie sheet and bake for 15 minutes or until slightly golden around the edges.

After cookies have cooled, drizzle melted chocolate and sprinkle crushed candy canes.

  5. I really like the idea of making up my own cake mix as that would be such a time saver! I used to make cookies from a boxed cake mix all the time but I too have been trying to get away from buying processed foods whenever I can. Thanks for the idea and these recipes. Pinned.

  7. I've never thought to have cake mix ready in jars, what a time saver. Those peppermint and chocolate cookies looks amazing, they are practically shouting 'Christmas' at me!!
