I have a new family favorite recipe baking omelettes in muffin trays.
Baked Muffin Omelettes
These are our new favorite recipes because they freeze nicely and help out on busy mornings and when we travel . Just grab a few and microwave for a minute or two.

First things first, you'll need to
oil the muffin tin and mix up your egg recipes.
These will bake for 20 minutes in 350 degrees.
Ham and Egg Muffin? Omelette ?
Not sure what to call this one, but you know what is happening here.
The ham and egg is just a matter of fitting the ham into the muffin tin and then breaking an egg inside. You can add some cheese on top too.
Egg Whites, Broccoli, Onion and Feta Omelette
1 cup chopped broccoli
2 tbl diced onion
1/2 cup crumbles feta cheese
16 oz egg whites(container whites)
Mix it all together
Add a pinch of salt and pepper.
Now for the olive omelette.
This is a game changer . I used Olive Muffalata from "That Pickle Guy". I purchased it at Costco and I can only get it at the Costco in Myrtle Beach, so far. This condiment is so much more than a condiment. It's a lovely addition to chili's , beans, rice...seriously rice, soups, and of course eggs and muffalata sandwiches! I'll add a link below so you can try this amazing product. OMG try it in pasta, so good!!! I use it in my black beans to zest them up.
Muffalata Muffin Omelettes
I added 6 whole eggs beaten to approx 3 tbls of "The Muffalata Mix" .
No need for salt and pepper either.
Pour Ladle into the muffin cups and bake.
Broccoli, Cheddar, Potato & Onion Muffin Omelettes
The last mix was whole eggs, diced potato and onion with a cheddar cheese topper.
6 eggs
1/2 diced uncooked potato
1 cup chopped broccoli
Pinch of salt and pepper.
Mix it up, ladle it in. BTW, I used an Asian style soup spoon to ladle my mix into the cups.It was perfect.
These are so easy and you can freeze them too.
I have a few recipes here for you, but feel free to mix it up with some of your favorite omelette ingredients.
