If you are growing a successful crop of cucumbers you will understand this odd recipe. It is surprisingly delicious and I highly recommend it.
We have an abundance of cucumbers from the garden sitting on the counter and inside the frig. I have made refrigerator pickles to fill one entire shelf of my frig. Additionally, we are experimenting with fermenting cucumbers. Oh, and not really a fan of relish, we decided to try our hand at a relish, with which I might add we are very satisfied. Suddenly , relish is yummy. Must be all the fresh ingredients.
I found a recipe on Pinterest that inspired this recipe. I changed things up a bit, mostly by leaving out the kiwi and adding basil.

Here's what I did.
Ingredients
- 1 lb cucumbers, about 2 medium cucumbers diced
- 1/2 of 1 fresh lime, juice only
- 1/4 cup packed mint leaves
- 1/4 cup packed basil leaves
- 1/8 cup maple syrup
- 1/8 cup agave
- 1 cup water
Throw it into the bullet or blender and pour into pop makers and freeze. A few hrs later omg. I feel like these tasted a bit like a mojito. So I was thinking this would be a fun bbq refresher. Here's what I'm thinking.
Freeze the mixture in ice cube trays and use pop sticks. Serve for dessert at a bbq with a shot of rum. Can you picture a tray making it's way around your party? #partyplanning #bbqideas #rumdrinks #summertimedrinks #rum #summer #bbq
