Crock Pot Gyros
All the Greeks out there are cringing but if they keep reading they may save themselves some time in the kitchen.
I can say that because I'm a Greek woman. Well half Greek. Well, actually Cyprian but you get the idea.
I buy the big boneless pork roast at Costco and divide it into 3 roasts and freeze them so I always have a roast around. For a while I was doing crock pot BBQ pulled pork but then I had this idea that worked out.Coat your roast with a generous drizzle of olive oil. Add a 1/2 teaspoon of cumin, onion powder and oregano. Add a whole clove of garlic or 2 and a few dashes of salt and pepper . I like to add a slice of lemon to the top. Add a cup of water to the bottom of the pan. Let it cook on low for 4-6 hrs.
Lay out the meat on a broiler pan , top with juices from the pot and broil on high for 5-10 min., until lightly browned.
Serve with a drizzle of olive oil, a sprinkle of oregano and and squeeze of lemon.
Tip:Take the oregano between your palms and crush it to grind it finely by hand as you dress the roast for serving. The finer oregano makes a big big difference, my sister and I both agree.
Serve inside pita breads with a tzatziki sauce, a chopped salad and a sprinkle of Feta cheese.
