Pluff Mud Cold Salad

Pluff Mud Cold Salad -Yes you can eat it warm also.








Ingredients
2 cups cooked Lentils
1.5 lemons juiced
1/2 small onion diced
1 small bunch of parsley chopped
large handful of spinach chopped small like an herb
4 tablespoons olive oil
1/4 cup chopped Walnuts
6 oz feta cheese

I recently moved to SC and became familiar with Pluff Mud, a mud that can be found along the tidal waterways when the tides go out. Read more about Pluff Mud here.       http://pluffmudperspectives.blogspot.com/p/why-pluff-mud.html Coincidentally, I'm reading a novel  about the SC coastline and Pluff Mud is mentioned and described often . Additionally, my friend Jake sells Pluff Mud T-shirts in his gift shop at Everything Under the Sun. The shirts are a driftwood color shirt dyed by the Pluff Mud. Basically, a stained dirty shirt. LOL. So with that on the brain,  as I look at the lentils being added to the salad, I think...Pluff Mud Salad. And so shall it be. Respect to the Pluff Mudd. 


Toss all the ingredients together and add the Feta cheese last for the final and gentle toss. Serve cold or warm out of a microwave .
I make a tabouli salad and this is in the spirit of a tabouli salad.
Why not add some cooked chicken and toss it in a wrap. This is one of my summer Sunday salads. Make it on Sunday for the week , take it to work, great side dish pairs well cold or warm.
